Baked rice custard with sultanas and nutmeg is a simple treat the whole family will enjoy. It is easy to prepare and is baked in the oven. A rice cooker makes the job simpler. It can be made with brown rice or even black rice to boost the nutrients and add a nutty taste.

Preheat oven to 350 degrees F (180 degrees C). Cook the rice in a rice cooker or boil for 10 minutes in a pan of boiling water. Drain the cooked rice. Add and mix in the water, milk and sultanas. Transfer to a 5 cup size, shallow baking dish and sprinkle nutmeg on top. Place the dish in another baking pan filled with boiling water so that it reaches about halfway up the side of the first dish. Bake for 40-50 minutes, or until the custard has set. Slice and serve warm or hot.
