Honey Mustard Chicken Recipe - Baked with Rosemary and Black Pepper



This is a very simple recipe that has a delightful taste and is very easy to make. A simple mix of Dijon mustard, honey, and olive oil is prepared, which is poured over the chicken in a ceramic or glass casserole dish and bake until done. You can leave the skin on or remove it. The dish takes about 10 minutes to prepare and cooks in about 45 minutes. The dish can be served with steaming rice or cous cous, which soaks up the delightful sauce which accumulates during the cooking.

Preheat the oven to 350 degrees F (175 degrees C). Combine the honey, Dijon mustard and olive oil together in a bowl and season with salt and freshly ground black pepper. You can add more or less mustard to suit your taste.Run salt into the surface pieces and sprinkle with pepper. Assemble the chicken pieces skin-side up in a shallow ceramic casserole dish. Place sprigs of rosemary between each piece and spoon the mustard and honey mustard sauce over the chicken.
 
Bake in the preheated oven for about 45 minutes, or until the chicken is cooked. But do not over-cook. Check with a meat thermometer or cut open the largest thickest piece of chicken and check inside. The meat thermometer should be a minimum of 175 degrees F (80 degrees C) on the inside.  The olive oil ensures the chicken stays moist when cooked. When cooked remove the pan from the oven. Spoon-off any excess oil. Sprinkle with extra salt, rosemary and black pepper when serving the chicken over rice or cous cous.
